Scrambled eggs with rainbow veg - serves 2

Handy for a high protein breakfast or lunch to support blood sugar balance. Experiment with
your own mix of favourite vegetables!


Ingredients

  • 2 spring onions

  • 1 celery stalk

  • 1 courgette

  • Half a red, green or yellow pepper

  • 10 cherry tomatoes, halved

  • 4-6 mushrooms of choice

  • 6 eggs

  • 1 tablespoon of chopped parsley

  • Half a tablespoon of olive oil

Method

  1. Heat the olive oil in a large pan. Slice all the vegetables and then gently fry for 3-5 minutes.

  2. Add the eggs into the same pan and stir, cooking for 5-8 minutes. Once cooked, sprinkle with the chopped parsley. Serve with spinach or rocket on the side to add some nutrient-dense green leaves!
