Scrambled eggs with rainbow veg - serves 2
Handy for a high protein breakfast or lunch to support blood sugar balance. Experiment with
your own mix of favourite vegetables!
Ingredients

2 spring onions
-
1 celery stalk
-
1 courgette
-
Half a red, green or yellow pepper

10 cherry tomatoes, halved
-
4-6 mushrooms of choice
-
6 eggs
-
1 tablespoon of chopped parsley
-
Half a tablespoon of olive oil
Method

Heat the olive oil in a large pan. Slice all the vegetables and then gently fry for 3-5 minutes.

Add the eggs into the same pan and stir, cooking for 5-8 minutes. Once cooked, sprinkle with the chopped parsley. Serve with spinach or rocket on the side to add some nutrient-dense green leaves!
