Guacamole

This tasty dip can be used with oat crackers or crudites for a snack. Avocados are rich in
healthy fats, fibre and several vitamins and minerals, including folate, while pumpkin seeds
are a good source of zinc.


Ingredients

  • 1 large ripe avocado

  • Juice of half a lemon or lime

  • 1 garlic clove

  • 1 medium sized tomato

  • 1 tablespoon olive oil

  • 1 sliced spring onion

  • Half a tablespoon of pumpkin seeds

Method
Blend all the ingredients together except the pumpkin seeds, which are for sprinkling on top.
